  1. In a medium sauce pan add butter and heavy cream.
  2. Bring to a boil and medium-low to medium heat.
  3. Stir in blue cheese crumbles.
  4. With a whisk, stir constantly as cream boils up.
  5. Keep to a boil, but make sure to stir the bottom of pan to not allow it to burn on bottom. If you can get it to consistently boil at a low temperature, this is ideal. Whisk and stir every few minutes.
  6. After about 10-15 minutes remove from heat and allow to settle. The sauce should be a thick consistency, perfect for topping on steaks.
  7. Cook steaks on grill to desired redness level.
