Steak with Blue Cheese Sauce

Honestly, this is my absolute favorite way of having steak.  Whether it's prime rib or beef tenderloin, this blue cheese sauce is an amazing addition.  It makes a steak even better since you need some added fat to all that protein.  This sauce reduces down to a thick sauce to top on your steak.

Instructions
  1. In a medium sauce pan add butter and heavy cream.
  2. Bring to a boil and medium-low to medium heat.
  3. Stir in blue cheese crumbles.
  4. With a whisk, stir constantly as cream boils up.
  5. Keep to a boil, but make sure to stir the bottom of pan to not allow it to burn on bottom. If you can get it to consistently boil at a low temperature, this is ideal. Whisk and stir every few minutes.
  6. After about 10-15 minutes remove from heat and allow to settle. The sauce should be a thick consistency, perfect for topping on steaks.
  7. Cook steaks on grill to desired redness level.
