Simple Almond Flour Pancakes
A simple almond flour recipe that can be sweetened up with a touch of ground cinnamon, or topped with a sugar free Lankato pancake syrup or a few berries!

  1. Whip eggs in a bowl with a fork or whisk.
  2. Mix together thoroughly all ingredients except butter and maple syrup.
  3. Heat non-stick pan to medium heat. Melt enough butter in pan to grease the pan.
  4. Drop in about 1/6 cup of the batter into circle pancake shapes.
  5. Allow to cook for 3-4 minutes before trying to flip. Like regular pancakes, these should be "bubbling up" before even trying to flip and the edges should be firm. Before trying to flip, ensure the entire pancake surface has bubbled through. If the edges are not firm, keep cooking. Then flip pancakes and cook for another 1-2 minutes.
  6. Serve with remaining butter equally portioned out. You can also serve with sugar free maple syrup if desired.
