Pumpkin Spice Keto Coffee

Fall came fast here in Colorado this year.  It's been a steady weather forecast of 60's, cold at night, and we're actually getting quite a bit of rain.  It's been overcast and dreary.  Not like normal sunshine Colorado I'm used to.

I've been totally against Fall so far.  I've now spent a few weeks dreaming of warm days, sunshine and boating, only to wake up to another day of cold and rain.

Well, today I decided to accept that Fall is here!  And what better way to welcome Fall than with a pumpkin spice coffee!

Every year pumpkin is all the rage, and this year will be no exception.  Pumpkin beer, pumpkin cookies and pumpkin spiced lattes!

Keto diet makes pumpkin spiced coffee easy.  Add some cream and some butter for extra creaminess, drop in a little pumpkin pie spice, shake it up and you're on your way!!!

The other reason I'm finally ok with Fall is that I'm taking a day trip to Rocky Mountain National Park to see the Elk.  Since it's been pretty cold, I'm probably right at the end of the Elk Rut.  It is one of my favorite things to do in September and October in Colorado.  The Elk are amazing and bugling noises are crazy if you haven't heard them.

I'll definitely be going on a few hikes to get better views of the Elk.  When I'm on keto, hikes are super easy and enjoyable.  I feel like I have energy to go for miles.

Today I'm going to brew another cup of this pumpkin spice keto coffee, put it in a canteen, and get on my way!

Instructions
  1. Pour brewed coffee into a protein mix shaker.
  2. Add all ingredients.
  3. Shake until butter has dissolved and pumpkin pie spice is thoroughly mixed ~ about 1 minute. Careful when opening the shaker, the drink will have pressurized a bit!
  4. Pour into coffee mug and Enjoy!
Recipe Notes

I recommend stirring as you drink, the spice really wants to separate from the liquid so that at the end you have a big gulp of pumpkin pie spice to drink.
