  1. Melt coconut oil in a non-stick skillet on medium-low heat.
  2. Add pre-cooked and cut chicken.
  3. Add all ingredients except cilantro.
  4. Allow to cook covered at medium heat for 10 minutes while stirring occasionally to mix ingredients.
  5. Make sure peanut butter is getting mixed throughout the chicken. The mixture will now be cooked, but a little soupy. Remove lid and allow to cook uncovered at medium heat (liquid should come to a boil) for another 15-20 minutes until desired thickness has been achieved.
  6. Serve and top with fresh chopped cilantro, if desired.
