If whole steaks are used, cut steak into strips with a sharp butcher knife. If cubed steak was used, ignore this step.
Sprinkle and pat seasonings 1/2 of seasonings mixture on chosen meat (chicken or beef). If using chicken, cut the chicken breasts into long strips first (about 1/2" wide by 3" long). Allow to sit while cooking vegetables.
Heat non-stick skillet at medium heat. Add coconut oil and allow to melt.
Remove the ends of the peppers. Cut in half and remove the seeds. Cut bell peppers into long strips.
Add peppers to the skillet and start to cook.
Remove the ends and skin of the onions. Cut onion into halves, and then slice into long strips.
Add onions to skillet and cook uncovered for 5-10 minutes until peppers are almost softened.
Add seasoned meat and distilled white vinegar.
Cook uncovered for another 5-10 minutes until meat is cooked through. Stir or flip meat as needed to cook evenly.
Sprinkle in psyllium husk powder to soak up the reserved liquid. Remove from heat.
Serve each serving with 1/8 cup sour cream and 1/4 sliced avocado.
