A keto grilled cheese with plenty of fat! If you can make fathead pizza, you can make keto grilled cheese even easier!
Only eat one sandwich at a time as this is not light on the calories. Dip in a low carb tomato soup!
Reserve 1 tbsp of butter for frying bread later. Butter should be room temperature. Cut in the butter, it does not have to be smooth, small pieces can be left but it should be smashed in as much as possible.
Spread dough out onto parchment paper (must use parchment paper - wax paper will meld to the dough when it cooks!) in the shape of a rectangle. The bread will rise in this shape, so you will want it about the width of normal bread slices (about 4").
Cook at 350F for 13-15 minutes. It should feel cooked to the touch.
Remove from oven.
Cut into 4 even sections to make 4 "slices" of bread. Remove from parchment paper.
Melt 1 tbsp butter in nonstick skillet on medium heat, and spread around pan.
Place two slices of bread on pan and top each slice with half of the cheese.
Place other slice of bread on top. Cover skillet with lid for 4-5 minutes.
Flip sandwich carefully and allow to cook another 2-4 minutes until cheese has melted.
