Keto Chilled Broccoli Salad

This keto broccoli salad is a nice side dish for a summer party.  Typically broccoli salad can be made into a sweet dish when it is non-keto, but the keto version can be quite tasty as well.  Add in crumbled bacon and chopped nuts and you've got a great broccoli side dish.  This broccoli salad is served cold, so it really is best for a summer party.

This is actually a very easy side to make as well.  All you have to be good at to make this easy keto side dish is chopping ingredients and stirring with a spoon!

Since broccoli is one of the best vegetables for keto, you'll want some variety in how you make broccoli recipes.  This chilled salad definitely give you that.  Sometimes it's difficult to eat broccoli raw, but not here.  Allowing the mayo to chill and mix in with the broccoli makes it more tender and easier to eat raw.

The mayo brings in the fat you want for keto dishes.  Make sure to pick your mayo wisely and read the ingredients on the back - if soybean oil is the first ingredient then it's not a real or healthy mayonnaise.  It's actually very difficult to find a real mayonnaise product anymore if you look at the ingredients, so we normally choose an olive oil or avocado based "mayonnaise" for our keto recipes.  The nutrition facts at the bottom are based on Hellman's Olive Oil Mayonnaise.

Who doesn't like crumbled bacon?  Adding bacon to a vegetable recipe and calling it healthy is one of the best parts of the keto diet.  If you love love love bacon, then cook up the whole package and crumble it into this chilled broccoli keto salad.  But don't forget, this is a veggie salad, not a bacon salad!  😉  This recipe makes it easier to get in those raw veggies!

Instructions
  1. Chop broccoli into small pieces (about 1" x 1/2") using primarily the florets.
  2. Discard most of the stalks.
  3. Chop up walnuts into small pieces.
  4. Chop or crumble cooked and cooled bacon into small pieces.
  5. Mix all dry ingredients (broccoli, walnuts, bacon and sunflower seeds) together.
  6. In a separate bow mix together mayonnaise and almond milk using a whisk.
  7. Stir in salt and pepper.
  8. (Optional) If a sweet salad is desired, mix into the mayo mixture 2 tbsp baking stevia like Truvia or Pyure using a whisk. If using a concentrated form of stevia, mix in small amounts to taste.
  9. Spoon in mayonnaise mixture into dry ingredients and coat all the broccoli.
  10. Put in refrigerator and chill for at least 2 hours or overnight. The longer it chills the better the mayo soaks into the broccoli.
  11. Serve and enjoy.
