Blueberry pancakes for an extra special keto breakfast! The blueberries only add a few extra carbs!

  1. Whip eggs in a bowl with a fork or whisk.
  2. Mix together thoroughly all ingredients except blueberries, butter and maple syrup.
  3. Allow batter to sit for 5 minutes for the almond flour to absorb the liquid. Gently stir in the blueberries.
  4. Heat non-stick pan to medium heat. Melt about 1 tablespoon butter per 3-4 pancakes (enough butter in pan to grease the pan).
  5. Drop in about 1/6 cup of the batter into circle pancake shapes.
  6. Allow to cook for 3-4 minutes before trying to flip. These should be rising in the pan before even trying to flip and the edges should be firm. They may not bubble like normal pancakes, but they should rise. Before trying to flip, ensure the entire pancake surface has risen. If the edges are not firm, keep cooking. Then flip pancakes and cook for another 1-2 minutes.
  7. Serve with remaining butter equally portioned out. You can also serve with sugar free maple syrup if desired.
