Feta Chicken Casserole

The Feta Chicken Casserole has a Greek flavor that's pretty darn delicious.  Diced onions cooked in butter, with lots of feta cheese really give this a nice flavor.  If you're looking for a different taste than your normal keto dishes, this is one to try.

Have you tried baby broccoli yet?  It's a refreshing switch up from regular broccoli.  Plus it's a little softer than normal broccoli and cooks a lot faster.  Don't remove all the stems because they soften up nicely and are a good addition to this feta chicken casserole.  Here's a picture of our baby broccoli:

Instructions
  1. Dice the onion and place in skillet on medium heat with butter, salt and garlic powder.
  2. Allow to cook covered for about 10 minutes. In the meantime, dice chicken.
  3. Add to skillet. Cook chicken covered for another 10 minutes.
  4. Chop the broccoli into medium size pieces.
  5. Add broccoli and parsley to skillet for about 5 minutes, covered.
  6. While cooking, mix together feta cheese, sour cream and eggs.
  7. Layer the chicken/broccoli mixture on the bottom of a casserole dish. Next, layer the cheese mixture. Repeat another layer of chicken and then cheese.
  8. Bake at 350F for 40 minutes, covered.
  9. Remove from oven and let sit for 10 minutes before serving.
