Cindy's Chicken Salad
A simple chicken salad recipe that is keto-approved. Celery and onions give this salad a crunch. Eat with almond crackers or keto toast.
shredded chicken, pre-cooked
(grilled on grill or pan cooked will work)
(3 large stalks)
red onion, chopped finely
(yellow will work in a pinch)
(use quality mayo, not just soybean oil)
(optional for added flavor)
(optional for added sweetness)
Shred the chicken if not already shredded and measure out 2 cups.
Chop the walnuts and celery into small pieces, about 1/4-1/2 the size of a dime.
Chop the onion into even finer pieces than the walnuts and celery.
Mix all ingredients together except the option mustard and stevia packets.
Taste and add salt and pepper to your liking.
If sweetness is desired add stevia packets to taste.
If more flavor is desired add 1 Tbsp yellow mustard.
Spoon onto almond crackers or keto toast for a meal!
