A keto meatloaf is one of the best "comfort" foods for the winter time. Served with a side of cauliflower mashed potatoes and roasted asparagus, and you have a warm keto meal that would warm you up on the coldest nights!
This keto meatloaf has a slightly different topping than regular meatloaf - heavy cream, cheddar cheese and dijon mustard combine to create an amazing fatty topping that really gives flavor to this dish.

Ingredients
- 2 lbs ground beef, 85% lean
- 2 large eggs
- 1/4 cup almond flour
- 1.5 tsp psyllium husk powder
- 1 tbsp butter
- 1 small yellow onion diced
- 1/2 tsp salt
- 1/4 tsp black pepper, ground
- 2 tbsp worcestershire sauce
- Topping:
- 1/2 cup heavy cream
- 2 tbsp dijon mustard
- 1 tsp psyllium husk powder
- 1/4 tsp salt
- 1/2 cup cheddar cheese shredded

Instructions
- Dice onion into small pieces.
- In medium nonstick pan, cook butter and diced onions for 5-10 minutes until mostly translucent, but not burning.
- When onions are finished cooking, mix all ingredients (except those under topping) together with hands or spoon, but ensure fully mixed.
- Form into roll and lay on 9x13 inch pan. Bake at 350F for 1 hour.
- Mix all topping ingredients in a bowl and set aside.
- In last 15 minutes of cooking the meatloaf, remove from oven and spread topping on top of meatloaf. Put back in oven for last 15 minutes.
- Remove from oven and let rest for 10 minutes before serving.
