Buffalo Sauce Keto Meatballs

When I realized how low-carb Frank's Red Sauce was, I had to get a keto recipe that incorporated it!  I love buffalo sauce.  So I was even more excited that their buffalo sauce said 0 carbs.

I don't have buffalo sauce that often, but it's a great ingredient in appetizers for tailgates and parties.  It's just another taste that reminds me of eating hot wings at bars or buffalo chicken dip at parties, so when I taste it I feel like I'm eating "normal" again.

Buffalo sauce is most popular on chicken wings and chicken products.  Buffalo chicken recipes like wings and buffalo chicken dip would also be great recipes for the keto diet.  Chicken and lighter flavored meats let the buffalo sauce take over the meat flavor.

Some people love buffalo sauce, but others would prefer a lighter flavor.  These buffalo sauce beef meatballs will fall under the "lighter flavor" category.  The beef does not allow the full flavor take over by the buffalo sauce.  There is  a nice tang, but not overwhelming at all.  If you want buffalo sauce to make your eyes water, you will need to add more than this recipe requires.  Or simply dip these meatballs in buffalo sauce when eating!

I like serving these buffalo sauce meatballs with a side of keto ranch dip AND a side of buffalo sauce.

Instructions
  1. Pre-heat oven to 450F.
  2. Melt the butter in a sauce pan at low heat with 1/6 cup buffalo sauce until fully mixed.
  3. Once fully mixed, remove from heat and set aside.
  4. Mix the ground beef, egg, almond flour together by hand.
  5. As long as the buffalo sauce is not hot (it can be warm), pour into the beef mixture.
  6. Add psyllium husk powder.
  7. Mix all ingredients until fully incorporated.
  8. Form into 1" balls.
  9. Place buffalo balls onto a cookie sheet greased with coconut oil.
  10. Bake at 450 for 15 minutes.
  11. Serve with a side of buffalo sauce and ranch dip.
  12. Makes 40 total meatballs. Serving size 5 meatballs. 8 Total servings.
