Buffalo Chicken Crockpot Casserole


This keto Buffalo Chicken casserole is a play on the popular buffalo chicken dip that is usually served with tortilla chips or crackers.  This is a keto meal version, which is plenty thick enough to eat plain, or with celery sticks (the nutrition info does not include celery sticks).

Using the crockpot sure makes this buffalo chicken recipe easy.  Basically dump all the ingredients in the crockpot on low and let it go!  This satisfies a special craving for snacks or superbowl foods with extra high fat for ketogenic diets.

Instructions
  1. Place chicken breasts on bottom of crockpot with butter.
  2. Pour over buffalo hot sauce and heavy cream.
  3. Sprinkle over all the seasonings.
  4. Place brick of cream cheese on top of chicken.
  5. Set crockpot on low for 3-4 hours until chicken is fully tender and cooked through.
  6. Stir occasionally over the time.
  7. With two forks or a knife, shred chicken and mix with everything together.
